For the past 8 years, Brenda has owned and operated mondo organics restaurant, cooking school and catering business in West End, in partnership with Sonja Drexler.
Brenda has been a Brisbane chef and restaurateur for 27 years, and mondo is her third business. She loves real food and good wine.
Favourite comfort food: soup made with organic butternut pumpkin and good chicken stock and kamut bread toast with lescure butter.
I don't really like eating: junk food, fast food, non-food, food made without love and respect, commercial rubbish.
To indulge I: eat at my restaurant.
Favourite bar: back bar at Ciccolina's St Kilda Melbourne, with a martini.
Most memorable recent meal: Pantagonian Toothfish at Mizu Japanese Restaurant, Teneriffe.
Great dish to cook with kids is (and why): I teach kids to cook at my restaurant - pizza everytime! Why? It's fun.
A wine that you enjoy: Red: 2005 Holm Oak pinot noir Tamar Valley Tassie. White: 2006 Hochkirch riesling southwest Victoria.
Fish and chips or hamburgers? Grilled, line caught snapper - yes!
There's no aphrodisiac like: West Australian black truffles in season now.
