A tasty breakfast recipe, courtesy of Zone Fresh Gourmet Markets.
Ingredients
- ½ cup almond meal
- 2 cups fresh ricotta
- ½ cup of sultanas
- 2 tbsp honey
- 2 tbsp semolina
- 1 tsp of grated lemon rind, remove the yellow skin with a micro plane
- cinnamon to dust the sweet cakes
Method
Mix all ingredients together and rest in the fridge for 1 hour.
Use a muffin or friande non-stick tin for baking out the ricotta sweet cakes for about 15 minutes.
Overnight, soak eight dried apricots in warm water. Remove from water and place two soft apricots with a nice amount of fresh raspberries on a plate and display the warm ricotta sweet cakes. Dust with a small amount of cinnamon.
