Wine can be very sensitive to temperature. Storing and drinking wines at their optimum temperatures will enhance the drinking experience.
Storage
Although the majority of wine purchases are made for immediate consumption, if you are buying in bulk or cellaring wine you will need to think about storage temperature.
Having a constant temperature will ensure your wine matures consistently, providing a better result.
For optimal cellaring conditions, the temperature should be kept constant, somewhere between 14°C and 18°C.
Humidity should be around 70%, and wines should be kept away from direct sunlight, strong odours, vibrations or pests. They should be stored horizontally in a well ventilated area.
Not all wines are suitable for cellaring. If in doubt, ask the winemaker.
Consumption
Some people state that red wine should be served at room temperature – but in Australia the difference in room temperature in winter and in summer can be a marked contrast.
The ideal temperature for red wine to be served is between 15°C and 18° C, so it may need to be chilled in summer.
White wines need to be chilled to between 7°C and 12°C, though making them too cold will hamper the subtle tastes and aromas of the wine.
